Watching some Bizarre Foods with Andrew Zimmern and he lands in good Ole Puerto Rico. There he goes to one of these hole in the wall kind of joints and has Alcapurrias stuffed with land fed crab (crabs that are caught and then corn fed).
Original Alcapurrias are stuffed with shredded beef of some sort but I am game for any variation! So now of course I am obsessed with trying them!
I hunted for some recipes and came up with too many variations so looking for some guidance to see which one might be the best.
Once I master them I will work on a wicked twist, like adding some hot chilies to the mix, changing the filling, etc……. but first I have to start by figuring out how to get the masa right!
