Rainy Sunday afternoon, perfect time to make some Coconut Macaroons or Coconut Kisses which actually is my translation of what they called them at home (Uruguay) “Besitos de Coco”.
This is the perfect little bite of heaven, not only to share with your family but also to have at hand when guests pop in for a cup of coffee or tea.
Teatime is a tradition that I thoroughly miss, something that I guess was a tradition in England but that my mother instilled in me dearly! Its my favorite meal of the day…..I can get lost reminiscing on the so many times as a kid when we were allowed the leftovers from Mum’s tea-parties and we got our cup of Earl Gray tea and some lovely treats………yummmm!
Anyway back on track, below is the recipe to these lovely bites of heaven. They only take 45 minutes from start to finish!
- 14 oz of shredded coconut
- 14 oz of condensed milk (1 can)
- 2 egg whites beaten to form peaks with 1/4 tsp of salt
- 1 tsp of vanilla
Mix coconut with condensed milk and vanilla, beat the egg whites with the salt until it forms peaks, then fold egg white mixture into the coconut mixture and you are all set!
Place tablespoons on baking sheet lined with parchment paper
Bake in at 325 Deg F oven for 25 minutes
Can it get any easier?
Also for a variety of flavors you can:
- Add Chocolate chips
- Drizzle with melted chocolate
- add chopped candied cherries & almond extract instead of vanilla
- add chopped pecans
