Martini or Cheesecake? Why not have both…….?

I was never a big Pumpkin anything lover, until one person totally converted me when she introduced me to her special Pumpkin Brandy Cheescake!

One bite and I was totally converted and a believer that plain ole pumpkin can be taken to new heights :-).

Of course I had to pair this lovely cheesecake with a Pumpkin Pie Spice Martini! Cheers……

  • 1 cup sugar
  • 1 teaspoon pumpkin pie spice
  • 3 cups vanilla or orange vodka or Pumpkin Vodka (if using Pumpkin Vodka you can use plain simple syrup)
  • Cranberry-flavored seltzer, chilled

FOR THE PUMPKIN SIMPLE SYRUP – In a small casserole , mix together the sugar and pumpkin pie spice with 1 cup water. Bring it to a boil, then remove from the heat, and let it cool for an hour. 

In a pitcher, add the vodka and half the simple syrup. Stir until blended. Add the cranberry seltzer and pour into chilled martini glasses. Add more pumpkin simple syrup, to taste, if necessary.
