As a family we rarely have breakfast together, you know how it goes, between the hustle and bustle, different work and school start times and the rush, the tradition of having breakfast is now a special occurrence on that odd Sunday morning!
An aunt of mine from Rio de Janeiro, Brasil, posted something on FB yesterday evening which I had seen before and forgotten about it, but seeing it again inspired me to make these fluffy egg clouds for breakfast this morning.
The video depicting the cooking process was in Turkish I think, so no idea what he was saying, but it was simple enough to figure it out!
- Bacon
- Eggs
- Toast
For starters I cooked my bacon in the oven on a baking rack placed in a pan so that the fat would drip down, 375 for 20-25 mins if you like it crunchyish.
Beat your egg whites with a bit of salt till they are nice and stiff.
In a frying pan I drizzled a bit of the bacon fat, then placed the lovely little puffy egg whites and made little nests.
Inserted an egg yolk into each one and baked it in the 375 Deg F oven for about 5 minutes and then I turned the broiler on High for about 2/3 mins to get the nice golden color on top!
Get your buttered toast ready, plate and enjoy, we for sure did! Thanks Aunt Linda for the lovely idea reminder 🙂
