Sunday morning, lazy kind of day, late breakfast for my honey and I. When asked the honey replied that he would love some sliced boiled eggs on breadie. Yes its a Norwegian thing of some sort but he is taking pills for it!
Started boiling the eggs when I suddenly notice that there is no bread of any sort in the house! I panicked for a moment and then I quickly recovered when I spotted the Flour Tortillas!
So instead of his usual eggies with breadie he had a flatbread eggie pizza and was very pleased with it. Love love making my hubby happy!
I, on the other hand, decided to once again tackle the leftovers, so out came last nights leftover weinerschnitzel, broccolini, roasted peppers, a flour tortilla, some mayo and some lovely ripe vine tomatoes.
I slightly toasted my tortilla in a pan with a small spray of pam.
Then I added a think layer of mayo, topped it off with some sliced tomatoes, chopped up weinerschnitzel, chopped up peppers and broccolini and a little drizzle of balsamic vinegar!
It was delicious if I may say so myself, nothing like leftovers turned into a new lovely meal!
