Sunday afternoon, can you think of anything better than a cup of tea with a lovely slice of Salted Caramel Apple Crumble or maybe a slice of Devils Chocolate cake, filled with chocolate mousse and topped with chocolate ganache?
Well I got my cup of tea but made the Salted Caramel Apple Crumble and Death by Chocolate Cake for a customer, but the aroma in the house of cooking apples, cinnamon, brown sugar, butter and salted caramel and chocolate was to die for!
Started by making my pie dough, laying it in my pie pan and putting it in the fridge whilst I worked on the filling.
The I peeled and chopped my apples, seasoned them well with brown sugar, cinnamon, nutmeg and butter and cooked them until they were nicely caramelized.
Filled my pie crust with the nicely caramelized apples, added some salted caramel and then topped it off with the rich buttery crumble.
Added a little bit more salted caramel and decorated it with some pastry rosettes.
Into the oven it went at 400 Deg F for about 15 minutes and voila! Salted Caramel Apple Crumble is ready.
Now to pay attention to the luscious chocolate cake.
My Chocolate cake came out of the oven right before I put the Apple Pie in.
I let it cool down and sliced it in 3 layers. Then I filled each layer with some light chocolate mousse, not too sweet, just right!
Finally, to wrap it all up, the entire cake got covered and decorated with chocolate ganache.
Also made some Mini Rum Cake full of Caribbean Spiced Rum as well as Andy’s Rustic Cheesecake.
Its been a busy day in the kitchen, now it’s time to get started on dinner……
