One Ingredient – Two Meals

Tonight I found myself with a hungry son and a sick hubby.

In the fridge I had a pack of Chicken Thighs, so I proceeded to take them off the bone.

Meat went on the board to be seasoned, stuffed with spinach and wrapped in bacon.


The bones and trimmings went into a a sizzling pot with a drizzle of olive oil, chopped onions and garlic.


Once they were nice and golden I added some water and some miso paste.


Stuffed chicken went into a 375 Deg F oven for about 35 minutes whilst I let the Miso Chicken soup simmer away.

So here we have, 1 ingredient made into 2 meals!

Stuffed Chicken served on a bed of rice for my son and I…….


and a lovely light Miso Chicken soup for my sick hubby <3
