Yes you heard right, this is a scrumptious low cal and low carb spaghetti and meat sauce!
Those of you who follow my blog’s have probably already come across my fave low cal low carb Shirataki Noodles, but yes I do agree that they are just not the same as regular noodles, they are kind of tasteless and have a funny texture.
So in order to enjoy them as much as a bowl of pasta you need to get creative….
Tonight I mixed Shirataki Noodles with Zucchini Noodles, gave them a quick sautéing with a little drizzle of Coconut Oil, salt and lots of black pepper and let them cook away.
In the meantime, I chopped some onions, garlic, nicely ripened tomatoes, fresh basil and oregano. I sautéed the onions till they were nicely caramelized. Then I added the garlic and minced meat and let it cook away!
Once the meat was cooked throughout, I added the chopped fresh tomatoes, oregano and basil, seasoned it with salt, black pepper and added quite a lot of red pepper flakes and 1/2 cup of low sodium beef stock.
Turned the temp down to low and let the sauce simmer away
Once the sauce was nice and thick, I placed a generous heap of the shirataki and zucchini noodle on a plate and topped them off with my rich spicy meat sauce and our tasty healthy dinner is ready 🙂
Hubby enjoyed it very much and that is a good sign of a successful dinner ❤
