If you want a dessert that has chocolate but is not too sweet, this is the dessert for you.
Can you think of a better combination than chocolate and fresh raspberries? Well yes there are probably quite a few but trust me on this one 🙂
Ingredients needed for this delightful dessert are:
For the Crust:
- 1 1/2 cups of crushed Oreo cookies (use food processor or blender)
- 6 tablespoons of melted butter
For the Filling:
- 1 lb of fresh raspberries
- 12 oz of semi sweet chocolate chips
- 1 cup heavy whipping cream
Mix crushed cookies with butter and tightly line the bottom of a 9″ round cake pan (springform pan makes it easier). Preheat the oven to 350 Deg Fahrenheit and bake crust for about 8 minutes. Remove from oven and let it cool down.
While the crust cools down, place chocolate chips in a bowl and put aside, place cream in a pan and heat until it reaches boiling point and then add to the chocolate chips. Stir mixture until completely mixed and its nice and glossy. This is now a simple Ganache that can be spiked with 3 tablespoons for any liquor you fancy.
Now it’s time to put this wonderful dessert together.
Take the Crust and cover the bottom with fresh raspberries and then slightly press them down.
Add the Chocolate Ganache and spread all over the top.
Finish off by adding a few Raspberries on the top for decoration, mint leaves which I did not have at the time make a wonderful addition, or sprinkle some edible gold glitter like I did 🙂
Refrigerate for a few hours and enjoy!
