Veggie Frittata



  • 2 eggs and 1 cup of liquid egg whites
  • 1/4 tsp salt
  • 1/2 tsp onion powder
  • 1/2 garlic clove


  • 1.06 oz of fresh spinach
  • 1.99 oz of zucchinni (cubed)
  • 1.52 oz of Baby Bella Mushrooms (sliced)
  • 1/2 tsp olive oil
  • 1/4 cup of basil

Used the 1/2 tsp of olive oil to saute the veggies. Whip the eggs up with the seasoning and add sauteed veggies to the egg mixture.

Using a non stick pan, added the mixture and cooked it on medium heat for about 4 minutes (check that it doesn’t burn), then flipped it and cooked it on the other side.

Flipped it onto a plate and covered it with shredded basil.
