Yes here is yet another lean and great suggestion:
- 2 cups of egg whites
- 1/2 cup of sliced cabbage
- 1/2 cup of fresh spinach
- 1 clove of garlic minced
- 1 tbsp chopped onion
- 1/2 cup of celery juiced
- 1 tbsp olive oil
- 1/4 tps salt
Grab your favourite frying pan, large one for that matter because there is a lot of egg!
Place 1/2 tbs of olive oil and saute the garlic, onions, cabbage and spinach, but don’t over cook the, its nice to get different textures in an omelette, then again if you don’t like texture, cook them till they are nice and mushy :-).
Add veggies to the egg whites, salt and mix well.
Add the rest of the olive oil and cook until there is not a lot of liquid at the top, then flip in half and turn over a couple of times till cooked through. You can also speed up the cooking by placing under the broiler for a few minutes but you would need an oven resistant pan for that!
Plate, add your shot of celery juice and of course I added a few dashes of tabasco sauce just because I love it!
