Ingredients
- 2 eggs
- 1/4 cup of egg whites
- 2 tbsp of low fat greek yoghurt
- 1/2 cup of cooked kale
- 1 tbps low fat blue crumbled blue cheese
- 1/4 tsp salt
- pinch of black pepper
- 1/4 tsp chopped garlic
- 1/4 tsp chopped onion
- 1/2 cup of chopped tomatoes
- 1/4 cup chopped cilantro
- 1/2 thinly sliced jalapeno (I like a spicy kick but you can leave this out)
Turn your oven on to 375 Deg F
Mix eggs with yoghurt, salt & pepper and put to the side.
In a skillet with a light spray of pam, lightly saute the garlic, onions and kale for a few minutes but not too long.
Add mixture to the eggs, together with the cilantro, tomatoes and blue cheese.
Spray a muffin pan and equally divide into 6.
Bake for aprox 20-23 minutes.
