Mini Egg, Kale & Blue Cheese Frittatas

Ingredients

  • 2 eggs
  • 1/4 cup of egg whites
  • 2 tbsp of low fat greek yoghurt
  • 1/2 cup of cooked kale
  • 1 tbps low fat blue crumbled blue cheese
  • 1/4 tsp salt
  • pinch of black pepper
  • 1/4 tsp chopped garlic
  • 1/4 tsp chopped onion
  • 1/2 cup of chopped tomatoes
  • 1/4 cup chopped cilantro
  • 1/2 thinly sliced jalapeno (I like a spicy kick but you can leave this out)

Turn your oven on to 375 Deg F

Mix eggs with yoghurt, salt & pepper and put to the side.

In a skillet with a light spray of pam, lightly saute the garlic, onions and kale for a few minutes but not too long.

Add mixture to the eggs, together with the cilantro, tomatoes and blue cheese.

Spray a muffin pan and equally divide into 6.

Bake for aprox 20-23 minutes.
