Recently I was introduced to Palmini products (rice, pasta, mash) made out of Hearts of Palm that count as a green veggie and are not a loaded carb :-).
So today I am testing the Palmini rice and using it to make a simple sushi roll.
For this recipe we are counting Greens and Protein so keep in mind that 1 pouch of Palmini Rice = 2 servings of greens
Ingredients:
- 1 x 12 oz package of palmini rice, rinsed
- 5 oz of raw salmon
- 1 sheet of seaweed
- 1 tbsp soy sauce
- 1/4 tsp of sriracha sauce
- 1/4 tsp of rice vinegar
- 5 celery stalks juiced plus a squirt of lemon juice
Directions:
First of all rinse the palmini rice thoroughly and then wring it in a tea towel or paper towel till you get all the water out.
Place your seaweed sheet on a sushi bamboo mat and gently pat the palmin rice down. You could add a tsp of light mayo to bind the palmini rice a bit better but I am avoiding the extra calories in this case lol.
Cut your strips of salmon, for this one I made the strips quite thick as all my greens are already in the palmini rice and my third green will be disclosed further down.
Roll your matt to create the roll and I added an extra layer of salmon. The leftover salmon I sliced it into even pieces and served on the side as sashimi.
In a little bowl, mix the soy sauce, sriracha sauce and vinegar for your dipping sauce.
Optional – And here comes the 3rd green element, place the celery juice into a shot glass and serve on the side. I did not like celery, let alone, celery juice but have gotten used to it and now it’s become nearly a daily thing. Give it a try, who knows, you might like it!
And by the way it turned out GREAT! Got my sushi fix, no rice and the dipping sauce brought it all together!
