Bruschetta topped Chicken Breast

Simple, healthy and delicious!


  • 1 x 6 oz chicken breast slice in half longwise so you get 2 fillets
  • 2 x vine ripened tomatoes
  • 1/2 garlic clove, minced
  • 1/2 cup chopped cilantro ( obviously you can use basil instead)
  • 1/4 tsp salt (divided)
  • 1 tsp balsamic vinegar
  • 1 tsp olive oil
  • 1/4 tsp black pepper
  • Spray olive oil


Chop tomatoes into small squares and place in a bowl. Add vinegar, oil, cilantro, garlic, half the salt and half the pepper and mix well and set aside in the fridge.


Lightly spray the chicken and season with remaining salt and pepper. Place in air fryer at 390 Deg F for aprox 12 minutes and turn over half way through.

Plate your chicken and top with the Bruschetta, and here is your tasty, healthy dinner in less than 30 minutes!
