The best part of this dinner, other than it being quick, is the fact that it was all done in my handy dandy air fryer! For those of you who use one, you know how wonderfully practical they are! I went from being skeptical about it and saying over and over “here goes another kitchen gadget I will never use again”, to “OMG where were you all my life”! Use it all the time and the most wonderful meals have come out of it.
So here goes today’s low cal dinner… yes Jicama is a low carb veggie 🙂
Ingredients:
- 6 oz of halibut (yep found out the price after I walked away from it, so let’s consider tonight’s dinner a special treat!)
- Dash of salt and lemon pepper
- 6 oz of jicama sliced into sticks ( I bought mine ready sliced and nicely packed from Trader Joe’s)
- 1/4 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp of salt
- 1 tsp olive oil
Directions:
Once you have sliced your Jicama into sticks, quickly boil until nice and soft.
Mine took about 20 minutes, the softer they are the more similar they are to potato texture. Drain and place on a paper towel and pat down till nice and dry.
Place Jicama sticks in a bowl, toss together with the olive oil, cumin, garlic powder and salt.
Then season the halibut with a dash of salt and lemon pepper.
Place both jicama sticks and halibut in the air fryer at 395.
Remove the Halibut after 12 minutes and continue to cook the jicama until nice and golden (aprox 8 minutes more after you remove the halibut).
