Nutella crazy moment

For the past couple of weeks I keep coming across a posting on Facebook about a Nutella 3 ingredient Brownies, so seeing that its Sunday, I decided it was the perfect day to try it out.

Talk about simple, I guess that is why the recipe is called 3 Ingredient Brownies right?

All you will need is:

  • 2 1/2 cups of Nutella
  • 3 eggs
  • 1 cup of flour

Mix them all together till you are left with a very thick gooey mixture :-).

Place in a pan sprayed with non stick cooking spray, I like lining my pan with foil to make it easier to get out as well as making the cleaning process a little bit easier.

Bake in a 350 Deg F oven for 25 minutes and there you have it! 3 ingredient Brownie in less than 30 minutes!

They taste OK, I still think I prefer proper chocolate Brownies but for those Nutella Lovers out there, there are not too bad.

Its not just a Banana Bread….

Banana Bread is something that I make 1 or 2 loaves of at least 3 to 4 times a month! I am happy to say that they don’t all get consumed by my family as at least 75% of them are enjoyed by my coworkers 🙂

Does anyone else have the “banana” issues that I have? If I don’t buy bananas, the family complains that there are no bananas. And when I buy bananas, they eat a couple and the rest are pushed to a corner and left to rot! That is how my banana bread are born every single time!

Thinking maybe this is a family conspiracy to make me make Banana Bread nearly every week, but wouldn’t it be just easier to tell me?

Anyway, today is one of those days where 3 very unhappy bananas were staring at me when I came back from work. To which I added 3 more not so unhappy ones to make a 2 loaves.

Banana Bread is just fabulous on its own, but my adventurous spirit and always looking for something different crazy brain decided that today we needed a little twist. And can you think of anything better than a cheesecake/banana bread combo?

So with that thought in mind, I prepared my banana bread the usual way and then mixed the following ingredients to make a cheesecake filling in the middle of it.

  • 8oz of cream cheese
  • 1/4 cup of sugar
  • 1 egg
  • 3 tbsp of flour
  • 1 tbsp of vanilla extract

Once I got the above nicely mixed I layered half the mixture of my banana bread into the mold, followed by the cream cheese mixture and then topped with the rest of the banana bread mixture.

The result is a fabulously moist banana bread with a big fat vein running through it of a luscious cheesecake consistency filling! Now how is that for a change?

This week everyone got lucky, as one of them is staying home (had to slice it to take a pic) and the pretty one is going to work ❤

Oh Baby Baby……….

Yes its Baby Shower time and time for another one of my favorite transformations.

Started by making 2 round red velvet cakes. Plain and simple and very boring……

Then shaped them to become something similar to 2 boobs and a bump 🙂 in between layers of cream cheese frosting.

Now, it’s make over time……

On comes the dress a well as some some bling!

In just 1, 2, 3 the transformation is over and the cute bump is ready to party ❤

To go with the glamorous bump we have some red velvet cupcakes decorated in true baby girl style :-).

There is nothing more beautiful than watching the glow of an expecting mother!

Salted Caramel Apple Crumble……Death By Chocolate Cake

Sunday afternoon, can you think of anything better than a cup of tea with a lovely slice of Salted Caramel Apple Crumble or maybe a slice of Devils Chocolate cake, filled with chocolate mousse and topped with chocolate ganache?

Well I got my cup of tea but made the Salted Caramel Apple Crumble and Death by Chocolate Cake for a customer, but the aroma in the house of cooking apples, cinnamon, brown sugar, butter and salted caramel and chocolate was to die for!

Started by making my pie dough, laying it in my pie pan and putting it in the fridge whilst I worked on the filling.

The I peeled and chopped my apples, seasoned them well with brown sugar, cinnamon, nutmeg and butter and cooked them until they were nicely caramelized.

Filled my pie crust with the nicely caramelized apples, added some salted caramel and then topped it off with the rich buttery crumble.

Added a little bit more salted caramel and decorated it with some pastry rosettes.

Into the oven it went at 400 Deg F for about 15 minutes and voila! Salted Caramel Apple Crumble is ready.

Now to pay attention to the luscious chocolate cake.

My Chocolate cake came out of the oven right before I put the Apple Pie in.

I let it cool down and sliced it in 3 layers. Then I filled each layer with some light chocolate mousse, not too sweet, just right!

Finally, to wrap it all up, the entire cake got covered and decorated with chocolate ganache.

Also made some Mini Rum Cake full of Caribbean Spiced Rum as well as Andy’s Rustic Cheesecake.

Its been a busy day in the kitchen, now it’s time to get started on dinner……

All tarted up…….ready to steal the spotlight!

Don’t you love it when something that can be so plain and simple as a vanilla cake, can get dressed up and step up to the plate to be the perfect center piece for that special occasion?

First of all I need to rectify the simple vanilla cake, its actually what they call the Miami Wedding/Birthday cake and let me tell you about it…..

Each cake has:

  • 3 sticks of butter
  • 1 package of cream cheese
  • 3 cups of sugar
  • 6 eggs
  • 3 cups of flour
  • 1 tbs vanilla
  • 1/2 cup of rum

Now this doesn’t include the filling or the fact that I made a total of 2 of these recipes to get all 4 cakes so you can do the math right? lol

Once all 4 cakes were made it was time to slice them and start filling them and covering them with a delicious rum buttercream icing.

Then it was time to get dressed up for the special occasion!

Lets not forget the lovely and chewy Brownie Pops that completed this cake for a Wigs and Mustaches Birthday Party!

Profiteroles………

It’s the middle of the week and tomorrow night I will be having all the kids and their grandma over for dinner.

After a while, cooking the same meals over and over gets a bit boring, so I try and make a special effort and come up with something original every time (well most of the time :-))

I haven’t fully decided on what’s for dinner yet but have for sure made up my mind about dessert.

How about some light and fluffy profiteroles filled with Orange Brandy Cream Cheese and dipped in chocolate? And for those who are not crazy about the Orange part (my lovely son), how about some profiteroles filled with Dulce de Leche and dipped in chocolate?

I made my choux pastry by:

  • Boiling 2 cups of water with
  • 1 cup (2 sticks) of butter, as soon as they came to a boil
  • stir in 2 cups of flour and beat until it forms a ball of dough
  • add 8 eggs one at a time and mix thoroughly

Place on a baking sheet lined with parchment paper by the spoonful or using a piping bag. Bake in a 400 deg oven for aprox 15 minutes, then raise temp to 425 and bake for an extra 10-15 mins or until they are nicely puffed and golden in color.

For my filling I used:

  • Cream cheese
  • Orange rind
  • Orange Sherry and fresh orange juice
  • Powdered sugar

The proportions are up to you, usually the ratio is 1 brick of cream cheese to 4 cups of powdered sugar, I only used 2 1/2 of sugar as I didn’t need it too stiff and didn’t want it too sweet. Orange flavoring to taste…..

Pipe lots of filling into each profiterole and then dip generously in some lovely milk melted chocolate.

And this my friends is what I call, the perfect bite………if you have ever seen The Mirror has Two faces with Barbara Streisand you will understand my fixation with the “perfect bite”!
