Food & Love, the perfect combination…

We have all heard the the way to a man’s heart is through is stomach! Well I tend to think of food as something that not only brings love into the equation, but it brings family and friends together, helps you make new friends and meet new people! The kitchen in every “foody” household is the heart of the house, the place to “be” ❤

Tonight’s dish is not only a favourite of mine and my hubby’s but also a fave of my daughters! Its simple, its elegant, its tasty and even kinda healthy!

I stopped by the store on my way back from work battling the bad weather and picked up some fresh salmon, avocados and some limes.


I chopped up my salmon tartare style and mixed it with some salt, pepper, grated ginger, sesame oil, Sriracha mayo and a squeeze of lime.

Whilst I was prepping the salmon I made about 1/2 cup of brown rice and let it cool down.


Sliced my avocado and now I was ready to put this special treat together.


I pulled out my heart shaped cookie cutter ( usually used for everything else but making cookies) and placed it in the middle of my plate, filled it with brown rice and neatly pressed it to the bottom.


Then I topped the rice off with my salmon tartare and finished it off with my sliced avocado and a sprinkle of black and regular sesame seeds.

In less than a flash, a wonderful meal is ready for my lovely family! Yep love is in the air, that’s for sure <3, now all I need is for the hubby to come back from dry-dock, in the meantime I will enjoy it and think of my family.


Mahi Burgers and Veggies

Rainy evening in South Florida calls for a nice home cooked dinner…..

Sticking to our healthy regime and after biking in the rain today we get to treat ourselves to some oven cooked mahi burgers and roasted vegetables.

For the Mahi Burgers I used:

  • 1 lb mahi mahi fillet, cut into chunks
  • 1⁄4 cup fresh chopped cilantro
  • 2 tablespoons hoisin sauce
  • 2 tablespoons low fat mayonnaise
  • 1⁄4 cup sliced green onion
  • 2 teaspoons minced fresh ginger
  • 1 garlic clove, minced
  • salt and pepper

Placed all of the above ingredients into a food processor and let it whiz away until all the ingredients were nicely blended. Shaped into 4 patties and baked in the oven at 400 deg for about 20-30 minutes.


For the veggies I used:

  • Baby New Golden Potatoes
  • Red, Yellow and Orange peppers
  • Onions
  • Green Onions
  • Cabbage
  • Baby Carrots
  • Garlic cloves

I gave it all a quick seasoning with salt, pepper, oregano and a little drizzle of sesame oil. Gave it all a toss and into a 390 Deg F oven it went for about 40 minutes until everything was nicely caramelized.


I plated the veggies, topped it with a Mahi Burger and topped it with a drizzle of my fave Sriracha Mayonnaise ❤


Dinner is served 🙂

Monday Night Protein dinner

After a 10 mile bicycle ride with the hubby, I decided we needed something light and nutritional for dinner.

Tilapia Fillet

I had some fresh tilapia fillets so I decided I would slowly cook them in a pan with a tad of butter, tons of lemon juice and capers. Prior to putting them in the pan I seasoned both fillets with salt and lemon pepper.


I served the tilapia on exactly 2 tablespoons of Achiote Rice.

Yesterday my hubby sent me an email with a recipe for Guacamole Deviled Eggs which sounded real yummy and fresh 🙂


I made 5 hard boiled eggs, sliced them in half and removed the egg yolk. I then peeled an avocado and mashed it with the egg yolks. Added some finely chopped red onion, a tsp of chopped cilantro, salt, pepper, lime juice and cayenne pepper.


Once the mixture was ready I placed it in a piping bag and piped it back into the egg whites. Finished them off with a dusting of paprika.


So tonights dinner was loaded with protein and very happy that they hubby enjoyed it all ❤

Hidden Treasures in South Florida

Although I have lived in South Florida for the past 18yrs, I have to say I am well over it, the heat and constant humidity makes it a very not so enjoyable place, so its a nice surprise when you travel north for just under 2 hours and find a hidden treasure!

Even though its only 2 hrs north, its amazing how much difference a few degrees less can make as well as a lovely evening breeze that makes dining outside a nice option!

A good friend and coworker – Sandy Modiano recently came back from a mini vacation with his wife and told me about this hidden treasure.


Seahorse Beach Bungalows is located on North Hutchinson Island in Port South Lucie County in the city of Fort Pierce. You cannot beat the price or the location.


Our room was a Studio room for under $100 a night, room had a full fridge, cooking range, microwave, sink, fully stocked cupboards with dishes, glasses, plates and cutlery, a little living room with a tv and a queen size bed and of course wifi. Outside we had a tiny deck and very close parking!


What else could we need, it was very functional, perfect location, quiet and convenient. Everyone we met was very friendly and the owner/manager was a pleasure to deal with.


Oh and did I mention that the beach is just a half block away!


So next time you find yourself in need of a beach break, go visit this place!

Spaghetti 3 ways…..

Today we celebrated the hubby’s birthday. Yes it is Memorial day, but a working day for moi, so I opted for an easy menu that I could prepare in advance.

Spaghetti was the star for the night, so all I had to do when I got back from work was boil the water, add some salt and toss the past in!


Turned on the oven and tossed in 2 bags of these fabulous Marketside Savory Garlic Knots that cook in 9 minutes and are just perfect to go with the pasta!


For the sauces I made 3 different kinds, this way everyone could either have a bit of everything, or just stick to their favorite! Oh please note I made the sauces yesterday so all I had today was heat them up!

So all in all, it took me 30 minutes to put dinner together, then popped open a bottle of fantastic wine that I purchased at Jerome Winery in Arizona whilst visiting my BFF last winter! And dinner was served 🙂


Had a fantastic evening with family and family friends and my favorite part being the after dinner table was filled with jokes, giggles, lots of laughter and love ❤ and a little bit of Cold Stone’s Cookies and Cream Ice Cream Cake.


Rosemary, Rosemary, Rosemary…

Walked by my huge fragrant Rosemary bush today and decided, whatever I make today will have to have lots of Rosemary!


I had 3 nice fat chicken breasts in the fridge so decided that was it, tonight we are having Garlic Rosemary & Lemon Chicken!

Out came the following ingredients:

  • 6 garlic cloves
  • 1/4 cup of rosemary
  • 1 lemon zest and juice
  • salt and pepper
  • chicken stock
  • 2 1/2 lbs of chicken breasts

I sliced the chicken breast in big thick slices, the thicker you cut them, the juicier they stay :-). Placed my chicken in a pan.


After peeling my garlic cloves, I used my handy dandy garlic press and added that to the chicken, together with a 1/4 cup of rosemary and rind of a lemon.

Drizzled it with some aromatic rosemary olive oil and tossed it nicely before putting it into a 450 deg F oven for about 20 minutes.


After 20 minutes, I pulled it out, gave it a nice toss, added 1/2 cup of chicken stock and juice of 1 lemon and put it back in the oven. Turned oven off and let it rest in there for another 5 minutes.


While the chicken was resting, I placed my newly discovered bag of petite sweet potatoes by Green Giant in the microwave for 8 minutes and presto! Dinner is ready for the lovely hubby and I ❤

Best part of it is that for once, I have leftovers to take to work for lunch tomorrow, now there we have it, 2 meals for the price of 1 🙂


PS: Next time I make this I am going to quickly sear the chicken to give it a little more color as it looked a bit anemic for my taste!

Veggie Pizza a la Andy

My honey is finally back from his business trip and I was in the mood for lots of veggies tonight.


Yeah yeah I know, no home made pizza dough today, bad bad girl, instead I used a can of Pillsbury Thin Crust Pizza dough.


Chopped some yellow and red onions, as well as some sweet baby peppers and some garlic and cooked them till they were nicely caramelized.


Once the above concoction was ready I put it to the side and paid attention to my dough. Sprayed some olive oil on my pan, spread the dough out and brushed it all over with some pesto sauce.


Into a 400 Deg F oven it went for about 15 minutes, I like my pizza crust nice and crunchy!


Once it was ready I topped it with lots of fresh arugula, followed by the caramelized onions, peppers and garlic and topped it off with some crumbled goats cheese and cranberries.


The hubby is a ham and green pepper pizza kind of guy so I was surprised when not only did he agree to have this for dinner, but seemed to thoroughly enjoy it <3.

I love my honey! Now to enjoy his company and my veggie pizza 🙂
