George Chang’s Cannoli Dip…

A good friend, Mr. George Chang, gave my a tub of his fabulous Cannoli Dip to see how I could incorporate it into my baking.

After a few days of pondering I settled on the following:

Sugar Cookie Bowls filled with cannoli dip, fresh strawberries and a drizzle of chocolate to finish them off! Don’t tell me that doesn’t sound good?

I have to confess I did not make my own cookies this time round, just used a pack of Betty Crocker Sugar cookies. Only change I made was I added 2/3 of a cup of flour to ensure that the dough was more manageable.


I grabbed one of my muffin/cupcake pans, turned it upside down and sprayed all the bottoms with non stick cooking spray.


I divided the dough into 12 kind of equal sized balls, flattened them with my hands and then lightly pressed them around each cupcake holder.


Instructions say to bake for 9-10 minutes, I left them in for about 15-18 minutes as I needed them to hold their shape. I removed them from the oven and let them cool down before I popped them off the pan.


And there we have them, some lovely sugar cookie bowls ready to be filled with this light, fluffy, tasty cannoli dip!

I piped some dip into each cookie bowl, topped them off with some chopped strawberries, a little drizzle of chocolate and they are now ready to be tested….. 🙂

Easter Banana Breads

Today I transformed my everyday banana breads into these rich and tasty Easter Banana breads.

Simply made my regular banana breads but spiced them up with cinnamon and all spice.


I them topped them off with a Rum and Cinnamon buttercream and decorated them with Cadbury’s Chocolate Eggs.

……….this is what happens when I find myself in the kitchen after baking a couple of dozens of vanilla cupcakes……


Cupcakes were plain and simple vanilla but full of butter and yumminess!

Once they were done I found I still had some cake batter left so I decided to put it into a pretty cake mold knowing that I wouldn’t get a full size cake out of it.


My half a cake came out looking beautifully light and fluffy so I decided to mix some warm cream and chocolate which of course became a luscious  chocolate ganache laced with some double espresso vodka!

So here is the final result, we went from nothing to this handsome piece of heaven! I think it looks handsome, don’t you?

The Mysterious Cookie Butter……..

A few months ago I discovered this wonderful stuff called Cookie Butter or Speculoos Cookie Butter!


To date I have only found 2 kinds, the one made by Trader Joe’s which you can obviously only get at Trader Joe’s stores or the one called Biscoff which can be found in Publix, Target, Walmart, etc….


I have found out you can eat it with a spoon ( a very dangerous calorie indulging sport!), have it with bananas, use it in cupcake icings, spread it on bread or crackers and use in cupcake and cake fillings.


But you know me, always after that very special bite with that very special ingredient.

Once again, thanks to my bad influential friend in Mount Dora, Ms. Ann Kaar, I have now been introduced to a recipe for Butterscotch Cookie Butter Fudge!

So here it is, quick simple and easy.


Mix 12 oz of butterscotch chips with 1/2 cup of cookie butter and 1 can of condensed milk.

Cook on low heat unit its all nicely melted.


Add 1 tsp vanilla and refrigerate!

I am already thinking of a few changes I would make to it but the hubby gave it the seal of approval ❤


Valentines Treats……….by Andy’s Kandy

Yes its that time of year when I get busy making sweet treats for this special lovers day!


I think that Valentines day is more of a Hallmark Day than anything else, as I was brought up believing that everyday with your loved ones is a special day, therefore being nice on just this one day doesn’t make it that special after all…..but that’s just me right?

Adding a Little bit of Spain to my Christmas Season

There are some traditions that we all look forward to during the Christmas Season.

For me its the fond memories of wishing that we would have Turron in the house for that special occasion, play hide and seek in our huge yard with the neighbours and of course opening gifts. I guess it sound kind of silly as nowadays you can get Turron everywhere! But there was something special about eating that wafer thin top layer followed by the gooey nougaty and chewy texture mixed with the crunchy nuts.


A few months ago I came across this funky bottle decorated with a cow pattern and a hanging bell called “Licor de Leche Merengada”.


Leche Merengada is another traditional spanish kids drink that I grew up singing a song about, but never got to taste it till my early twenties when I went to Spain and totally fell head over heels with it.

So on this note, with all the above memories swimming through my crazy brain, I decided to add a touch of Spanish into my Christmas spiked fudge.


Tonight I made a lovely batch of Rich Chocolate Fudge laced with quite a bit of Leche Merengada Liquor, and Ole Ole it fits in perfectly with the Christmas Spirit!

What could be better than a chocolate cupcake?


A chocolate cupcake filled with Vanilla Cream and topped with some rich luscious chocolate ganache!

So here is how it all went down.

Make your chocolate cupcakes……and while they are baking……..prepare your cream and make your ganache.


Once the cupcakes have cooled down, gently remove a core, fill the hole with cream and top it off again with the piece of cake you had removed.

Wait for the ganache to set and cool down (for faster results place in fridge or freezer depending on how in a rush you are), get your hand blender and whip it up. Place in piping bag and pipe away!


I finished them off with a Monogram of the birthday boy in question and a little sports detail!


So whoever takes a bite of one of these cupcakes will experience the mix of a light devils chocolate cake filled with a refreshing vanilla cream and wrap it all up with a rich chocolate ganache!
